1. Strawberry Poptart Cookies
Serves- 20
Prep time- 15 minutes
Cook time- 12 minutes
Total time- 27 minutes
For the strawberry poptart fans, this recipe makes 20 of these delightful strawberry poptart cookies - a super moist, buttery, sugar cookie with strawberry Poptart pieces all mixed in with rainbow sprinkles. These Strawberry Poptart Cookies are so delicious and mouthwatering soft and make such a fun strawberry themed dessert that everyone will love! PS they are also ready to eat in just 30 mins!
You will need
• 2 sticks of unsalted butter (room temp)
• 1 1/2 cups sugar
• 1 tsp Vanilla extract
• 2 eggs
• 1/2 tsp salt
• 1/2 tsp cream of tartar
• 1/2 tsp baking soda
• 3 cups of flour
• 5 frosted strawberry Poptarts (chopped into small pieces)
• 1/4 cup of rainbow sprinkles
• 2 cups of powdered sugar
• 8 tbsp of heavy whipping cream
• 2 tbsp of rainbow Sprinkles for topping

Store in an airtight container in the fridge for 3-4 days.
The glaze is optional! You can use whatever rainbow sprinkles you like, i used tiny ball sprinkles. You can add extra Poptart pieces into the dough instead of using them for toppings!
Line a large baking sheet with parchment paper and preheat the oven to 350°. In a large bowl add the butter and sugar and beat using a hand mixture until everything is creamy.
Add the vanilla and eggs and mix again.
In a medium sized bowl add the salt, cream of tartar, baking soda and flour and stir.
Slowly add the dry mixture into the wet mixture little by little and mixing with the beater in between.
Add the Poptarts but leave about 1/3 of a cup of pieces to the side for topping later. Add the sprinkles as well, mix once again until everything is well mixed together.
Scoop about 2 tbsp of dough out and roll into a ball, place down on the cookie sheet leaving at least 2 inches in between. If you don’t want the glaze on top of the cookies later, place the leftover Poptart pieces into the top of the cookies now.
Bake for 11-12 minutes. Let the cookies cool for a bit and then transfer to a cooling rack. While cooling make the glaze, in a medium bowl add the powdered sugar and heavy whipping cream, mix with the hand mixer once again until a glaze forms.
Once the cookies are completely cool pick them up and dip the tops of the cookies into the glaze, set down and top with the leftover Poptart pieces and sprinkles. I did half glazed cookies and half with no glaze! Serve and enjoy!

2. Strawberry Pie Party Bites
These Strawberry Pie Party Bites are a delightful mini dessert, featuring buttery crusts filled with sweet, juicy strawberries and whipped cream. Cook Time: 10 minutes at 325 degrees
Down time: 10 minutes
You will need
• Cooking spray or butter and pastry brush
• 5 sheets of phyllo dough
• ½ pound strawberries
• 1 tbsp sugar
• Whipped cream
First preheat the oven to 325 degrees.
Grease a mini muffin pan.
Arrange a phyllo dough sheet on a large cutting board and lightly spray with cooking spray or use butter and a pastry brush. Layer another sheet of phyllo dough on top of that, and repeat these steps until you have 5 layers.
Using a pizza cutter, cut in 12 squares (see process image)
Arrange a square into each of 12 cavities of the muffin pan, gently pushing it to the bottom and against the sides.
Transfer the pan to the oven and bake for 10 minutes, then remove and allow to cool.
While the phyllo dough is baking, cut the strawberries into very small chunks, and add them to a bowl. Sprinkle sugar over the strawberries and stir to combine.
Chill in the refrigerator until the phyllo dough cups and cool.
Remove the phyllo cups from the muffin pan, and fill with the strawberry mixture.
Top with whipped cream when ready to serve.
3. Mini Strawberry Pies
Serves- 20 Prep time- 15 minutes Cook time- 20 minutes Total time- 35 minutes
These look complex but are so quick and easy to make - plus look stunning on the party table! They are perfect for a picnic spread or strawberry themed birthday party or baby shower and take only 4 ingredients. They are great to make at home with your little helpers and they are so cute! You could even swap the filling out for cherry, blueberry... there are so many options! Strawberry pie is one of the best desserts, but making it into a mini version is even better!
PS tips and tricks!
• Store in a airtight container in the fridge for 3-4 days
• No parchment paper? Spray the baking sheet with nonstick cooking spray. You can pick up the rest of the pie crust (after cutting the cookies out of it) and roll it into a ball and flatten it out with a rolling pin to cut extra cookies out!
• No cookie cutter? Use a cup that’s around about the same size!
You will need
• 4 store bought refrigerated pie crusts
• A round shaped cookie cutter
• 21 oz can of strawberry pie filling or strawberry jam
• 1 egg
• 1 tbsp of white sanding sugar
First preheat the oven to 350° and line a large baking sheet with parchment paper. Roll the pie crust out on a flat surface and use a cookie cutter to cut out circles out of 2 of the pie crust rolls.
Add the cut out cookies to the baking sheet. Add 1-2 tablespoons of the strawberry filling to the middle of each cookie. Make sure to leave a tiny bit of pie crust around the strawberry filling. Unroll the last two pie crusts and use a pizza cutter or knife to make small strips.
In a small bowl add the egg and stir, brush the beaten egg around the edge of the cut out pie crust, making sure there’s no strawberry filling on the edges. Take the pie crust strips and make a lattice pattern on the cookie, pressing the edges down on the egg washed sides. Do this step carefully so the strips don’t break.
Once you have all the strips placed correctly use the same cookie cutter and place over the cookies so the edges come clean from the lattice. Brush the beaten egg over top of each cookie once again and then sprinkle with the sanding sugar.
Bake in the oven for 20-25 minutes or until the tops of golden brown. Let cool completely and then serve and enjoy!
