1. Spring Toffee Cracker Bark
This Easter Toffee Cracker Bark is so mouth watering good and looks almost too pretty to eat, yet it is so easy and simple to make! The crispy crunch from the brown sugar coated saltines, yummy white chocolate all over top with beautiful colored swirls, Easter sprinkles and Cadbury eggs mixed in make it so moreish.
This is such an easy, perfect, dessert to make for spring time! You could even create some parcels of these pretty pieces to serve to guests as party favours. This toffee cracker bark produces approx 28 servings and takes about 10 mins prep time and 10 mins cook time.
You will need
• 48 saltine crackers
• 1 cup of unsalted butter
• 1 cup of brown sugar
• 24 oz vanilla almond bark
• 1 cup of pink candy melts
• 1 cup of yellow candy melts
• 1 cup of blue candy melts
• 3 tbsp of Easter sprinkles
• 10-12 Cadbury mini eggs
1. Line a large baking sheet with parchment paper and preheat the oven to 350°. Add the saltines to the baking sheet in even lines, making sure they are all touching.
2. In a medium sauce pan add the butter and brown sugar and stir with a whisk until everything is melted. Let it boil for 4-5 minutes, stirring here and there.
3. Pour all over top of the saltines and carefully spread with a silicone spoon. Add to the oven and bake for 5 minutes. You want it to become golden brown and bubbly.
4. While that’s baking melt the almond bark and the candy melts in separate microwave safe bowls.
5. Take the baking sheet out the oven and pour the almond bark all over and spread around carefully. Add dollops of each different colored candy melts all over the white almond bark.
Next, use a knife or similar to carefully swirl the colours all around.
Add the Cadbury eggs all over and sprinkle the sprinkles all over top.
6. Place in the freezer for 20 minutes or longer. Once solid, lift the parchment paper and lift the whole thing out of the baking sheet.
Break into pieces with your hands, serve and enjoy!
Tips and tricks!
Store in an airtight container in the fridge for 3-4 days.
Make sure parchment paper is hanging a tiny bit over the edges of the baking sheet.
You can use a knife instead to break it apart.
You can use whatever sprinkles you’d like!
2. M&M Bunny pretzel treats
These M&M bunny pretzel treats are super easy to make but look so beautiful arranged together, for a standout display!
These make delightful spring or Easter themed party snacks, the perfect fusion of sweet and salty within one candy.
These only take 15 mins to make and guests will love - just be extra careful when serving to very young guests in case of choking hazards.
You will need
● 20 Pretzel Snaps
● 20 White Candy Melts
● 40 Spring Coloured M&Ms
● Edible Food Marker (optional)
1. Preheat the oven to 250°F (120°C). This low temperature will soften the candy melts without fully melting them.
2. To create the bunny on top of each pretzel, you'll need two M&Ms of the same color—one whole M&M for the face and two halves for the ears. Cut 20 M&Ms in half. If adding faces, draw them on 20 whole M&Ms and let the ink dry for a few minutes before handling.
3. Line a baking sheet with parchment paper for easy cleanup. Arrange the pretzels in a single layer on the sheet. Place one white candy melt on each pretzel.
Bake for 3-4 minutes, just until the candy melts are soft but still hold their shape.
5. Remove from the oven and quickly press a whole M&M onto each pretzel, then add two M&M halves to form ears. Gently press them into the softened candy.
Let the candy melts set completely, about 15 minutes, before serving or handling.
Tips and tricks! If you are in the UK where we don't have pastel M&Ms (sadness), our chocolate Smarties may be a good alternative, as they are extremely similar and only slightly bigger than M&Ms. We also found these pastel coloured personalisable M&Ms that would be great for this!

You could incorporate all different types of candy (just be sure there is nothing chokeable for small ones) and even try some different coloured melted chocolate for a colourful effect. This recipe serves about 8 portions, takes 15 mins to make and 30 mins chill time to set in the fridge.
You will need
● 1-12oz bag white chocolate baking chips
● PEEPS Marshmallow Bunnies
● Easter candy sprinkles
● Assorted Easter candy - We used Spring M&Ms and Cadbury mini eggs
● Oil based red food coloring
1. Line a baking sheet with parchment paper or a silicone baking mat and set it aside.
2. Melt the white chocolate baking chips in the microwave, stirring every 20 seconds to prevent seizing. We recommend using disposable paper bowls for easy cleanup.
3. Once fully melted, transfer about 1/4 cup of the chocolate into a separate bowl and mix in red food coloring until you achieve the desired shade of pink.
4. Pour the remaining white chocolate onto the prepared baking sheet and spread it into a large rectangle. Drizzle the pink colored chocolate over the top in thin lines, then use a toothpick to swirl the colours together.
5. Decorate with Peeps bunny marshmallows, Easter sprinkles, and candies.
6. Refrigerate uncovered for about 30 minutes or until firm. Once set, break or cut into pieces. Store any leftover bark covered in the refrigerator.
Tips and tricks! Be sure to use an oil based food colouring that is suitable for colouring chocolate - alternatively you could use some colourful candy melts, just like in our first spring recipe - just melt them down to liquid form and use them to decorate your candy bark!
