How to make Bunny Meringue Cookies

Here is how to make these adorable bunny shaped meringues! Not only the perfect spring party table offering, these snowy bunny meringues will be sure to delight everyone, for spring or at any time of year. These are also perfect if you are looking for an Easter or spring themed party treat or gift idea that is a little different and a cute twist on the traditional egg shaped offerings! 


To make these, you will need

• 130g fresh egg whites (or carton egg whites with whipping agent)

• 260g granulated sugar 

• 80g water

• orange gel food colouring 

• pink gel food colouring 

• green gel food colouring 

• Four small bowls (for each meringue colour to go) 

• A medium bowl (or the bowl of the stand mixer) 

• A small saucepan 

• A candy thermometer 

• A mixer or whisk (we used a stand mixer) 

• A spatula or spoon 

• A black edible food marker 

 A silicone mat (this one is perfect!) 👈🏻


• A baking tray

• 4 piping pastry bags for each meringue colour (with small to medium tips)


    

1. To begin, first preheat the oven to 220F. 


2. Then, in a small saucepan, combine 260g of sugar and 80g of water and stir. Turn on the heat and wash the sides of the pan with a pastry brush and water. With a candy thermometer on the side of the pan wait until sugar syrup reaches 240°F. 


3. Meanwhile, add the egg whites to your medium bowl or the bowl of your stand mixer. 


4. When sugar syrup reaches 240°F, start whipping the egg whites on medium speed. Wait until egg whites get foamy and when the sugar syrup reaches it’s target temperature of 245°F, slowly pour it into the foamy egg whites. 


5. Continue to whip egg whites to the stiff peaks stage until it is glossy in appearance.


6. Divide the meringue into 4 small bowls. Add food colouring to 3 of the bowls, stir with spatula until combined. You will have green, orange, pink and white meringue bowls. 



7. Using piping bags with small to medium tips, make the bunny as shown in the process images. 



8. Carefully pipe the pink details of the nose and ears on afterwards, using your smallest piping tip. Repeat for each bunny cookie you want to make. 



Bake at 210F for at least 1 hour up to 2 hours. Let them cool down. 



9. Use a black ink edible food marker to dot the eyes and bring your creations to life! 


To store, place in an airtight container and keep in the fridge for up to 4 days. Don't worry if each turns out slightly different, they will still look so cute and striking all arranged together!
