1. Strawberry Poptart Cookies
Serves- 20 Prep time- 15 minutes Cook time- 12 minutes Total time- 27 minutes
For the strawberry poptart fans, this recipe makes 20 of these delightful strawberry poptart cookies - a super moist, buttery, sugar cookie with strawberry Poptart pieces all mixed in with rainbow sprinkles. These Strawberry Poptart Cookies are so delicious and mouthwatering soft and make such a fun strawberry themed dessert that everyone will love! PS they are also ready to eat in just 30 mins!
You will need
• 2 sticks of unsalted butter (room temp)
• 1 1/2 cups sugar
• 1 tsp Vanilla extract
• 2 eggs
• 1/2 tsp salt
• 1/2 tsp cream of tartar
• 1/2 tsp baking soda
• 3 cups of flour
• 5 frosted strawberry Poptarts (chopped into small pieces)
• 1/4 cup of rainbow sprinkles
• 2 cups of powdered sugar
• 8 tbsp of heavy whipping cream
• 2 tbsp of rainbow Sprinkles for topping

Store in an airtight container in the fridge for 3-4 days.
The glaze is optional! You can use whatever rainbow sprinkles you like, i used tiny ball sprinkles. You can add extra Poptart pieces into the dough instead of using them for toppings!
Line a large baking sheet with parchment paper and preheat the oven to 350°. In a large bowl add the butter and sugar and beat using a hand mixture until everything is creamy.
Add the vanilla and eggs and mix again.
In a medium sized bowl add the salt, cream of tartar, baking soda and flour and stir.
Slowly add the dry mixture into the wet mixture little by little and mixing with the beater in between.
Add the Poptarts but leave about 1/3 of a cup of pieces to the side for topping later. Add the sprinkles as well, mix once again until everything is well mixed together.
Scoop about 2 tbsp of dough out and roll into a ball, place down on the cookie sheet leaving at least 2 inches in between. If you don’t want the glaze on top of the cookies later, place the leftover Poptart pieces into the top of the cookies now.
Bake for 11-12 minutes. Let the cookies cool for a bit and then transfer to a cooling rack. While cooling make the glaze, in a medium bowl add the powdered sugar and heavy whipping cream, mix with the hand mixer once again until a glaze forms.
Once the cookies are completely cool pick them up and dip the tops of the cookies into the glaze, set down and top with the leftover Poptart pieces and sprinkles. I did half glazed cookies and half with no glaze! Serve and enjoy!

These are girly and fabulous and will be sure to impress your guests! They also 'tie in' perfectly to the trendy bow or 'coquette' style party theme - that would also be great for a sleepover party! This recipe is longer, so has its own post.
3. Loaded Stacked Potato Bites
These are extremely tasty, decadent and delicious, perfect bites of comfort food, decked out with melted cheese, garlic, butter and salt and pepper! They are the perfect bite sized tasty morsels and make great party snacks.
The chilli flakes add a little kick, but you can always choose not to include, if any guests have an intolerance to spicy food. They are gorgeous, with or without!
You will need
• 3-4 small yukon potatoes
• 4 tablespoons butter
• ½ tablespoon chopped fresh thyme
• 3 cloves garlic minced
• 1 tsp onion pd
• ½ tsp chilli flakes (optional)
• 1 cup grated parmesan cheese
• Salt and pepper
Before beginning, preheat the oven to 400°F and prepare the muffin tin with cooking spray and set it aside. Peel and slice the potatoes using a mandoline (recommended) or sharp knife.
In a large bowl, add the sliced potatoes, melted butter, chopped thyme, minced garlic, parmesan cheese, chilli flakes, salt and pepper.
Stir well to combine all the ingredients.
Layer the sliced potatoes in the prepared muffin tin, dividing equally. Fill over the edge of the muffin tin cup and, using the back of a spoon, gently press down on the top of each stack.
Then sprinkle some more cheese over each stack. Cover the potatoes with the foil and bake in the preheated oven for 15- 20 minutes.
Uncover the potatoes and continue baking for another 20 minutes or until the potatoes are fork tender and golden brown.
Once the potatoes are done baking, if wanted you can garnish with a little more grated cheese and parsley on top, then wait one minute then slide a butter knife around the edges and remove gently, using a teaspoon to release them.
Serve and enjoy! You could place mini skewers through the center of each stack to make them easier to pick up - perfect party food!
4. Pizza pinwheels
These tasty pizza pinwheels are a must to make and are the perfect comfort food in bite sized form! They are great to dip, carry all the flavour and are a quick and delicious make for a sleepover party or occasion. You can make platefuls in one go and they get eaten so quickly!
With prep time taking 15 minutes, a 15 minutes bake time and 15 minutes dough chill time, they can be made with a few ingredients from your kitchen cupboards.
You will need
• 2 sheets rolled puff pastry sheets
• 1 egg
• ½ cup pizza sauce
• 1 cup sharp cheddar
• 40-50 slices pepperoni
• 2 tbsp finely diced green peppers
• 2 tbsp grated parmesan cheese
• 1 tsp oregano
• 2 sheets rolled puff pastry sheets

Carefully unroll the puff pastry and leave on the parchment it is packaged in.
Spread half of the pizza sauce on each puff pastry to cover the entire surface, minus a one-inch strip along the long side.
Divide the cheese and sprinkle over the pizza sauce.
Place the pepperoni evenly over the surface of each puff pastry.
Sprinkle with the finely diced green peppers.
Sprinkle with the parmesan cheese and oregano. Then, carefully, and as tightly as you can without ripping the dough, roll the puff pastry along the long side, opposite of the space we left empty in step 2.
Crack the egg into a bowl and stir with a fork. Use a pastry brush to brush the egg along the empty space to create the seam for the pinwheel.
Allow the roll to rest on the seam and use the parchment it was packaged in to roll the entire log and place in the freezer for about 15 minutes or so to firm up before cutting.
Then preheat the oven to 350 degrees. Line and spray a couple baking sheets, set aside.
Once the pinwheel log has chilled, remove from the freezer and immediately slice into ½ inch or so size pieces. Place cut side up on the prepared parchment. Brush each pinwheel with the egg wash.
Bake in the preheated oven for approximately 15 minutes or just until browned.
Tips and tricks! Pinwheels can be stored in an airtight container in the fridge for up to 2 days. Serve with additional pizza sauce to dip.

This Strawberry Shortcake Fluff is so light, creamy and just the perfect amount of sweetness! This dessert is so extremely easy to make and absolutely delicious! Each bite is just bursting with flavours of strawberries, vanilla pudding, angel food cake and more.
You will need
• 1 cup of milk
• 3.4 oz box of vanilla pudding mix
• 8 oz container of whipped topping (thawed)
• 1 lb of fresh strawberries (sliced)
• 1 cup of mini marshmallows
• 2 cups of angel food cake (diced into cubes)
• 1/2 cup of crushed graham crackers
• Graham crackers for dipping
• 1 cup of milk
• 3.4 oz box of vanilla pudding mix
• 8 oz container of whipped topping (thawed)
• 1 lb of fresh strawberries (sliced)
• 1 cup of mini marshmallows
• 2 cups of angel food cake (diced into cubes)
• 1/2 cup of crushed graham crackers
• Graham crackers for dipping
1. To begin, in a large bowl add the milk and pudding, mix together. Wait 2 minutes for it to thicken some.
2. Add in the whipped topping and gently fold with a silicone spoon until completely mixed together with the pudding.
3. Add most the strawberries and mini marshmallows (spare a few strawberry halves to decorate afterwards) and gently fold once again until completely mixed together.
4. Add most of the cubed angel food cake (spare a few pieces to decorate afterwards) and fold again to mix.
5. Then fold them in gently, taking care not to overmix.
6. Pop it in to your serving plate or dish, then decorate by adding any remaining pieces of strawberries and angel cake cubes.
7. Sprinkle the crushed graham crackers all over top. You can serve immediately with graham crackers to scoop or you can place in the fridge until ready to serve!
Tips and tricks!
Store in an airtight container in the fridge for 3-4 days.
You can save extra sliced strawberries and angel food cake cubes for topping at the end to make it prettier.
Never stir this after making the pudding, it will flatten it and not make it so fluffy, only fold.
